Entrepreneur | Hospitality Professional | Certified Sommelier
Daniel Warrilow is a distinguished beverage industry professional with expertise in operations management, brand ambassadorship, and hospitality business development. With a deep background in customer service, team leadership, and sales strategy, he has successfully built and managed high-performing beverage programs across both on-premise and brand sectors.
Currently, Daniel is the President of Ice Shoppe, a brand-building, marketing, and hospitality consulting firm specializing in bar and restaurant development. Previously, he served as the National Account Manager for Chareau Aloe Liqueur, overseeing national distribution, account management, and strategic expansion. He also held the role of National Italian Portfolio Ambassador for Campari America, where he led educational programs for seven Italian brands, shaping marketing strategies that emphasized heritage and authenticity.
Daniel’s operational experience includes leadership roles such as General Manager and Bar Director at Son of a Gun in Los Angeles—where the restaurant earned a place on Bon Appétit’s “10 Best New Restaurants in America”—and Director of Beverage at The Dominick Hotel in New York City. His wine expertise extends to a tenure as East Coast Sales Manager for Emeritus Vineyards. He spent several years of his career opening outposts and developing the wine and cocktail programs of the BLT Restaurant Group in NYC, DC and Los Angeles.
A Certified Sommelier with the Court of Master Sommeliers, Daniel has also completed the prestigious Bar 5 Day program and BarSmarts Advanced certification. He is currently pursuing a Viticulture and Enology degree from UC Davis. His industry recognition includes being named a Top 10 Best American Brand Ambassador by Tales of the Cocktail in 2020 and 2022, as well as serving on the International Bar Awards Judging Panel for The World’s 50 Best Bars from 2015 to 2018.
With a strong vision for hospitality innovation, Daniel continues to develop successful ventures, including bars and restaurants in Lockhart and Austin, Texas as well as Chicago and Waikiki. His ability to combine operational excellence with brand-building expertise makes him a sought-after leader in the industry.

Longtime bartender and accomplished mixologist, Travis Tober has 25+ years of experience at top restaurants and innovative cocktail bars across the country, working at nearly every position in the beverage industry. He has spent years creating and consulting on national beverage programs for well-known restaurant brands including Ruth’s Chris Steak House, Landry’s, Hard Rock Cafe and TGI Fridays.
Tober is now the Owner of Nickel City, a globally-acclaimed East Austin cocktail and neighborhood bar opened in 2017. Under his guidance, Nickel City has quickly risen to become one of the top bar programs in the country, drumming up a slew of accolades including Esquire’s “Best Bars in America,” Garden & Gun’s “Best Southern Bars in America,” Perrier's "World's 50 best discoveries," Bar and Nightclub's "Best Neighborhood Bar," CultureMap’s “Tastemaker Awards: Bar of the Year,” Time Out’s “Bar Awards: Best New Bar,” Austin Monthly’s “Best New Bar,” and was a 7 time Finalist for Tales of the Cocktail’s Spirited Awards for “Best American High Volume Cocktail Bar.” and " Best American Bar Team" Prior to Nickel City, Tober was Beverage Director at VOX Table and head mixologist at the Four Seasons Austin, where he elevated the beverage program to previously unseen heights. There is no outposts of Nickel City in Fort Worth & Houston Texas.
Tober is also the owner of other acclaimed Texas Bars Murray’s Tavern, Old Pal, the Down ‘n Out, Best Little Wine and books and Uncle Nicky’s. He also overseas the beverage program and is a partner in La Volta Pizza and Swim Club in the Downright Hotel.
